Le Mesnil Sur Oger
This mythical house has a great singularity. Its champagne comes from a single grape variety, Chardonnay, a single cru, Mesnil-sur-Oger and a single vintage. Something rare in Champagne more used to the art of blending.
This champagne comes from the one-hectare plot, "le Jardin Salon", and nineteen other small plots of Mesnil-sur-Oger, selected by Aimé Salon at the beginning of the 20th century. The wines are kept in the cellar for an average of ten years before revealing their complexity and finesse.
Eugène-Aimé Salon was born on October 7, 1867 in Pocancy, at the foot of the Côte des Blancs in Champagne and compares the respective merits of the vineyards of Cramant, Avize, Oger and Mesnil-sur-Oger. He thus determines that the grapes of Mesnil give wines the most suitable for aging. He defines his terroir, the Côte des Blancs, the best cru, that of Mesnil-sur-Oger, the best plots, those above the church, located on the "terroir", where the balance between sugar and acidity is perfect. His vision became clearer: he would make, for himself, for his personal consumption, a champagne without blending.
