Chavy-Chouet: two families, two villages on the coast with as a link, the love of the land for 7 generations. After 6 years at the wine school and with various experiences in viticulture and winemaking around the world, Romaric offers a new face to the estate. Alone in charge since 2006, he watches over the 15 hectares of vines with high standards, spread over 14 appellations. Proud of his roots, he oscillates between rigour, tradition and innovation.
An ecological spirit translates into daily but moderate plowing, replacing herbicides for more than 30 years. Thanks to sulfur and copper, the only inputs used on the land, the plants are protected, strengthened and supported to give the best of themselves. Minimalist interventions in vinification, impeccable cleanliness also symbolize this perpetual search for excellence in the production of pure, balanced and energetic wines.
