Chiara Condello's estate is barely 5 hectares of vines between 150 and 300m above sea level, in the heart of Emilia Romagna, 100% Sangiovese.
This winegrower offers organic viticulture, attention and respect for plants and soil, manual work, organic fertilization, mechanical weeding and very low use of sulfur and copper. According to her, it is important to have healthy and balanced vineyards. The goal is to bring healthy, ripe grapes to the cellar.
The harvest is manual and the work in the cellar is governed by the principle of respect for the grapes and the time required by Sangiovese. The fermentation tanks are filled by gravity. Opposed to anything that can bring standardization: fermentation with native yeasts, very little temperature control and long maceration. Aging takes place in Slovenian oak barrels before being finished in the bottle, where the wine is placed without filtration.
