In 2001, François de Nicolay succeeded his mother with his sister Claude. An experience as a wine merchant allows him to assist in the transformation of wines from certain estates converted to biodynamics. He very quickly realized the level of quality of the wines obtained thanks to this method and decided to convert the family estate. The Domaine therefore cultivates its 13.7 hectares according to completely natural methods and switches the entire estate to biodynamic cultivation at once from the 2008 vintage.

 

The vinification is faithful to tradition, but uses the contributions of current oenological knowledge. Perfect hygiene, a perfectly sorted harvest partly in whole grapes and partly in destemmed grapes. Nothing other than sulfur in very small quantities is used. Once the vinification is finished, the wines go down to the cellar in barrels, then bottling without filtration or fining, and this by gravity. Bottled goldsmithery.
