The Domaine de l'Enclos, These are 2 brothers, Romain and Damien with 29 hectares of vines in organic farming on the 4 levels of Chablis appellation, 2016 is the first vintage vinified at the Domaine de l'Enclos.


They attach great importance to the life of the soil. They only use products of natural origin, copper, sulfur and plant preparations. Organic fertilizer, disbudding, neat trellising, leaf stripping, manual harvesting on all our wines. The estate is fully certified organic.



In the cellar, vinification is done without input, no sulphur, with native yeasts and the aging of the wines in vats and barrels can last up to 18 months on the lees. The wines are neither fined nor treated by cold. Only a light filtration and a moderate addition of sulfur is carried out before bottling.
