Chambolle Musigny
Louis Boillot is a descendant of the great Boillot de Volnay family. He previously worked with his father and brother at Domaine Lucien Boillot, but in 2003 he decided to become independent. Initially, he made wine in Gevrey, but for 20 years he has been making his wines in the cellar of his wife, Ghislaine Barthod, in Chambolle-Musigny.
Louis produces wines from different Burgundy climates from which he inherited plots. But not only, he makes some pretty vintages from the Beaujolais side.
Today, he and his wife Ghislaine are particularly happy to be able to pass on their philosophy of viticulture to their talented son, Clément, the minimum of treatments in the vineyard, the minimum of intervention in the cellar. Short preferential maceration, aging in wood for 15 to 18 months with a maximum of 30% new barrels, bottling without clarification or filtration.
