After working in Burgundy with Jean Yves Bizot until 2021, in New Zealand and completing his studies in Dijon, Nicolas Barbou finally decided that he was ready to start his own project at home in the Loire Valley. Return to his land, that of the family estate where he grew up.

 

During this period he observed, learned and understood from his different adventures, the desire to make his own wine with common sense, reflection, emotion, passion and freedom. This is why he works with different grape varieties: Sauvignon, Chardonnay, Chenin, Gamay, Pinot noir. The first is Sauvignon with old vines in Touraine.

Nicolas treats his vines with an organic approach, encouraging the natural growth of their environment to promote the resilience of the vine and create a sustainable ecosystem within. For the two wines, Utopia Créative and Folie Insolente, the grapes are pressed in whole clusters and spend 20 months in used barrels, without racking, before being bottled with just a small dose of sulfur.
