Pierre Gerbais
This estate located in the Côte des Bar, in Celles-sur-Ource, cradle of this family of winegrowers for 8 generations. We owe it to Pierre Gerbais to have largely shaped, from the end of the 1940s, the current contours of this small family property of around fifteen hectares.
Sedimentary clay-limestone soils from the Kimmeridgian period. For black grape varieties, the Gerbais favor black clay soils, while the white clay plots are home to white grape varieties, chardonnay of course, but also and above all pinot blanc, which is one of the emblematic grape varieties of the Domaine.
Today it is Aurélien Gerbais, Pierre's grandson, who continues the adventure with his wife Audrey; the family's vines have not seen insecticides and other synthetic treatments since the 1980s. In the cellar , he remained faithful to vinification at low temperature in stainless steel vats, preserving the freshness and purity of the taste of the fruit which constitute the Gerbais style. However, he does not refrain from testing the contribution of vinification in barrels, for a few plots of old vines. Finally, go even further in piecemeal work and the constitution of perpetual reserves.
